<P> In this process the beef tongues from the slaughter area are dressed while they are at a temperature not lower than 33 degrees C, stiffened by refrigeration to about 1.6 degrees - 7.2 degrees C and passed several times while they are stiff through a flaking machine which grabs a front end of the skin and sticks out the tongue at a speed which does not exceed about 18.20 meters per minute in a blade which peels off a thin layer comprising the skin from the surface of the tongue. The skinned tongue is wrapped, canned and frozen for shipment. </P> 主权项：
