In the old days, fresh flood had to be eaten in the city no more than one or two days after it left the farm. If kept longer, it would spoil. One of the reasons behind it is that the air contains many liv-ing things that can harm our food. Some things, such as insects, can be seen by us.

Others, like bacteria, can be seen only with a microscope.

All living things need water and man discovered that if this wa-ter is removed, the activity of

the bacteria, which causes food to go bad is prevented. In other words, we can protect some of our food by drying it. Besides, living things can grow only at certain temper-ature, so we can also

protect our food by heating or cooling it.

A New York man had an idea. He filled a wooden railroad car with tons of butter. The car pulled the butter from New York to Boston.

How could this be done? The butter was packed in ice, and twice during the trip, more ice was added. This was the first refrig-erator car. As a matter of fact, people also used Wooden boxes

to keep their food.

Now we have mechanical refrigerator cars and mechanical re-frigerators at homes and stores

It is difficult to imagine what life would be like without memory. The meanings of thousands of everyday perceptions, the bases for the decisions we make, and the roots of our habits and skills are to be found in our past experiences, which are brought into the present by memory.

Memory can be defined as the capacity to keep information available for later use. It includes not only “remembering” things like arithmetic or historical facts, but also involves any change in the way an animal typically behaves. Memory is involved when a rat gives up eating grain because he has sniffed (闻到) something suspicious in the grain pile. Memory is also involved when a six-year-old child learns to swing a baseball bat.

Memory exists not only in humans and animals but also in some physical objects and machines. Computers, for example, contain devices for storing data for later use. It is interesting to compare the memory-storage capacity of a computer with that of a human being. The instant-access (即时调用) memory of a large computer may hold up to 100, 000 “words” ready for instant use. An average U.S. teenager probably recognizes the meaning of about 1,004,000 words of English. However, this is but a fraction of the total amount of information which the

teenager has stored. Consider, for example, the number of faces and places that the teenager can recognize on sight.

The use of words is the basis of the advanced problem-solving intelligence of human beings. A large part of a person’s memory is in terms of words and combinations of words.

A well-made film offers a whole world of things to watch. First there are the story aspects—the plot, characters, dialogue and themes. Then there are the technical aspects—the camera work, cutting and special effects. And there are many other things, like the credits and musical score and the acting. A well-made film offers much more than you see in one viewing.

Films are a means of communication. They can tell you things, just as newspapers do, or television, or any other means of communication. Sometimes they communicate important things to you, like ideas or lifestyles or ways of looking at the world. Sometimes people are aware of this, and sometimes not. The more aware you are, the better.

Notice, for example, the way films sometimes affect fashion. A star dresses or wears her hair in a certain way, and suddenly everyone is imitating her. Boys in the 1950s could sometimes be seen wearing black leather jackets, lounging on street corners and smoking cigarettes. They were imitating Marlon Brando. His films taught them a certain way to behave.

Films can also teach politics. In Star Wars, the heroes were a bunch of lovable incompetents

fighting with guts and not much else. They were, in fact, rather like the British in the early days of WWII. Their enemies, like the Nazis, had a big advantage in equipment and numbers of troops, and they were like the Nazis in discipline and heartlessness too. The whole film, in fact, was a re-run of WWII,and taught values like faith and love of liberty. This is all to the good, but the point is, did you notice it?
